The research goal was the risk assessment of bacteriological indices and hygienic indicators of meat and meat product pavilions on the territory of market N2 operating in the city of Yerevan. In Armenia for the first time was used a method of risk assessment of hygienic indicators, which is widely used by European Union counters. The obtained research results indicate that the majority of meat-product pavilions are in medium and high risk zones. To mitigate the identified risk level, it is necessary to introduce preliminary programs of GMP (Good Manufacture Practice) and GHP (Good Hygienic Practice), that will then underlay HACCP (hazard analysis and critical control points).
